Here, you will discover an exquisite array of flavors: eel tartare glazed with apple-coffee and black pepper, accompanied by a chip of Jerusalem artichoke; carabinero shrimp tartare served on profiteroles with stracciatella; fresh scallops paired with grapefruit sorbet and chili; asparagus marinated in citrus juice with sea bass slices and black caviar; and a velvety chicken liver pâté whipped with basil, served on banana chips dusted with yellow curry. Additionally, indulge in duck fillet jamón drizzled with melted dark chocolate, ponzu sauce, and chestnut cream.
