Gastronomic set with Champagne Lanson at O2 Restaurant
The new tasting menu by Brand Chef Ivan Markov, created in collaboration with Champagne Lanson, is a poised edit of classic pairings, curated with quiet confidence and impeccable restraint.
The opening is light and unexpected: tomato marshmallow with crab. It continues with an oyster, elevated into refined street food and finished with a delicate lemon glaze. A warm potato doughnut with pike and black caviar follows — a subtle, contemporary nod to champagne’s most timeless companions.
For the main courses, black cod with an intense seafood reduction and gently braised celery sets a tone of precision and depth, before quail in chicken parfait with spelt, mushrooms and truffle brings the menu to its most indulgent point.
The evening concludes with a selection of cheeses and marinated fig — simple, considered, and perfectly attuned to a final glass of champagne.
