Carpaccio Festival in O2 Restaurant
The Moscow Restaurant Week by MGF Team traditionally delights connoisseurs of exquisite gastronomic experiments. After seven years of reigning supreme, French tartare has been replaced by its elegant Italian cousin, carpaccio. From 12 to 28 July, the capital is expecting the boldest combinations, the brightest, most intriguing and provocative variations of the famous dish. Discover new hits of this summer and fresh takes on the eternal classics by Vladimir Shchepilov in O2 Restaurant:
- Beef carpaccio with foie gras espuma and black truffle. A classic French combination with a touch of Japan - the chef whipped foie gras and parmesan together with ponzu sauce.
- Parrot fish carpaccio with crispy banana is complemented by oyster ice cream and banana cream whipped with cilantro, lime and blue spirulina.
- Topinambour carpaccio with grilled artichokes and berries is served on parmesan cream with capers, red, white and black currants.
